Roasted Red Capsicum Pesto Pizza

Ingredients

    * 4x 25 cm pizza base
    * 6 tbsps prepared pesto
    * 1 1/2 cups roasted red capsicum strips
    * 1/2 cup chopped canned tomatoes
    * 1 cup crumbled gorgonzola cheese

Method

   1. Preheat oven to 200oC
   2. Line 2 baking trays with baking paper. Place bases on trays.
   3. Spread each pizza base with pesto, and then top each with pepper strips, tomatoes and gorgonzola cheese.
   4. Bake for about 10 minutes or until the cheese melts and the bottoms are nicely browned.
